Jellied Fresh Cranberry Salad
2 cups white sugar
3/4 cup water
-Cook to a syrup-
2 tablespoons gelatin
1/2 cup cold water
-Dissolve-
3 cups raw cranberries
1 orange (quarter and remove seeds and cut pulp from center with scissors)
3/4 cup pecans, chopped fine
3/4 cup celery, chopped fine
2 teaspoons lemon juice
While the syrup is hot, add the dissolved gelatin.
Grind cranberries and oranges together, saving the juice to use in it. Mix together and when cool, add nuts and celery. This can be molded in a pan and cut into squares, or poured into molds. Cool in refrigerator. Serve on lettuce leaf with mayonnaise.
