Ham Salad Recipe

Beaumont Inn’s Country Ham Salad

Chopped aged country ham makes for a wonderful topping on a salad but my (and Chuck’s) favorite use of our chopped country ham is making country ham salad/spread.

6 cups chopped aged country ham
1 cup chopped celery
1/2 cup chopped red pepper
1/2 cup chopped purple onion
1.5 cups chopped sweet pickle
2 chopped hard boiled eggs
2 tablespoons of whole grain mustard
Hellman’s Mayonnaise to your liking.

Of course, you can vary the amounts of the ingredients to satisfy your own taste buds or do like I do, simply add until it tastes right! Anyway, this is great on crackers, finger sandwiches with a thin slice of homegrown tomato, toasted open faced sandwiches with tomato and a melted slice of your favorite cheese (Swiss is yum!), or as an appetizer – toasted crustini, ham spread, thin slice of homegrown tomato topped with shredded parmesan cheese run under the broiler!
